I was looking for a new way to serve pork tenderloin for a small Easter dinner for my boyfriend and I. I think I found it. This recipe from Epicurious.com created a beautiful and scrumptious dinner, and incredible leftovers.
The only change I made to the recipe, was to take some of the pear nectar and cook it down with a little chicken broth, then let the pears simmer in that for a little while & serve it all together. Be careful not to burn the nectar. I wanted a bit more pear flavor. Plus of course, I seasoned the hell out of it. It definitely needed some good ole salt and pepper. Enjoy!
